Pat V’s Molasses Cookies
By Jane O'Dea
INGREDIENTS:

Pat V was a lovely lady and family friend who enjoyed baking and sharing her wonderful treats. These cookies are a holiday favorite of my family. They are very easy to make and always look perfect!

3/4 cup shortening
1 cup sugar
1 egg
4 tablespoons molasses
2 cups flour
2 teaspoons baking soda
1/2 teaspoon ground cloves
1 1/2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/4 cup sugar to roll cookie balls in just prior to baking

PREPARATION:

Combine first 4 ingredients and mix well. Incorporate remaining ingredients except for 1/4 cup of sugar and mix well. Chill dough slightly. Preheat oven to 350 degrees. Place 1/4 cup sugar on a plate. Remove dough from fridge and form into 1-inch balls. Roll each in sugar and place on baking sheet, leaving room for dough to spread out. Bake for 12 minutes. Do not double this recipe – for some reason, it does not work well. Makes 3 dozen cookies.
